My roommate and I are always trying to find healthy ways to eat our favorite foods, one of those being pancakes. We also always joke about being hungry an hour after eating, so finding recipes that allow us to add in some protein powder to stay full is always a plus!
These banana oatmeal raisin protein pancakes are seriously to die for. I got the inspiration from one of my favorite restaurants in my hometown that had a similar recipe. Of course I had to try and make them for myself at home.
What We Used:
- 2 bananas
- 1 cup of oats
- 1 teaspoon vanilla
- 1/2 to 1 cup almond milk
- 1 scoop chocolate protein powder (or vanilla if you don’t want chocolate pancakes!)
- 1 cup raisins
- Raspberries (optional for topping)
- Honey (optional for topping)
How We Made Them:
We started by adding the bananas, oats, vanilla, almond milk and protein powder into a blender (this is the hardest part of the recipe, seriously). The only thing hard about this is that we eye-balled the amount of almond milk we used. You don’t want the recipe to be too thick that it won’t mix, so add almond milk as needed so that your mixture is liquid enough to not have any clumps.
After everything was blended we added in raisins by mixing them in with a spoon so they wouldn’t get chopped up. Then we put the batter on a pan and started flipping pancakes. Yes, it was really that simple! Top with raspberries and honey for a seriously delicious and filling breakfast (or any meal because when is a bad time to eat pancakes?)
