Hello readers! I have been craving everything sweet with trying to maintain a healthy diet (as it always happens when you try and be healthy) and I had a bunch of ripe bananas in my kitchen. I used to bake banana bread all the time a couple of years back, but at that time in my life I didn’t care about living a healthy lifestyle and know that it was a beyond unhealthy version (whoops).
I took to Pinterest and stumbled on this recipe and decided to give it a try. I opted to use olive oil rather than coconut oil simply because that’s what I had in my pantry. Overall, this recipe is a really healthy alternative for when you’re craving a treat without wanting to set yourself back.
I set my timer for 40 minutes rather than 55 as suggested to make sure that it didn’t burn. I also used a Bundt cake pan because I didn’t have a loaf pan on me. Personally, I think this made it look nicer and was a great alternative that I will likely choose to do again in the future.
As far as optional add-ins, I opted for blueberries, pecan chips and milk chocolate chips. Without the chocolate chips, this recipe would be a really healthy way to “splurge” without splurging, but there’s nothing wrong with giving in to something sweet every now and again!
This recipe came out super moist and super yummy. I could honestly eat the entire thing by myself because it’s not overly rich or heavy. I’ll definitely be making this again next time I have some ripe bananas laying around.
